General Food Standards
There are ten Codex committees and three taskforces that develop general standards and guidelines that cut across industry. These are:

- Food Additives
- Food Additives and Contaminants (now split into Contaminants in Food and Food Additives)
- Foods Derived From Biotechnology
- Food Hygiene
- Food Import and Export Certification and Inspection Systems
- Food Labelling
- General Principles
- Methods of Analysis and Sampling
- Nutrition and Foods for Special Dietary Uses
- Pesticide Residues
- Residues of Veterinary Drugs in Food
Food Commodity Standards
There are ten committees and one taskforce that develop specific standards and guidelines related to food commodity groupings. These are:
- Cereals, Pulses and Legumes
- Cocoa Products and Chocolate
- Fats and Oils
- Fish and Fishery Products
- Fresh Fruits and Vegetables
- Fruit and Vegetable Juices
- Meat Hygiene
- Milk and Milk Products
- Natural Mineral Waters
- Processed Fruits and Vegetables
- Sugars
- Vegetable Proteins
