ANZDAC - Australian Manual for the Validation and Verification of Heat Treatment Equipment and Processes
With the increasing emphasis on food safety within the dairy industry and the continuing move towards implementation of quality management systems, there exists a need to ensure that pasteurisers are designed, installed, operated and checked in a manner that ensures that no untreated or partially treated milk passes forward.
This document prepared by a working group under the direction of the Australia New Zealand Dairy Authorities' Committee (ANZDAC) sets out the guidelines to be followed for the preparation of procedures so that a measure of the validation of pasteurisation can be achieved.
It is intended that the procedures will be incorporated as an integral part of each factory’s/processor’s quality management system to achieve certification by accredited third party bodies and by the Australian Quarantine and Inspection Service and the State Dairy Authorities.
